Smoky Sweet Jose BBQ Sauce

I purchased this great organic beef share over the summer (Hi Eddie!).  I've always been a "Beef, its what's for dinner!", kind of gal and I HIGHLY recommend this share.  Not only is the beef fantastic, but they are good people.  Eddie took the time to give me a personal call and explain the process.  How nice is that? 

I'm familiar with grass-fed and it takes a bit of tweaking your usual cooking methods to get it just right, but once you do...oh man.  The grass down in Kentucky must taste good because this meat is delicious.  Anyway, check it out and enhance its natural flavor to perfection with our duo, just do it.  

Part of the fun of the share is the variety and looking for ways to use cuts that I don't typically purchase.  I received several packages of short ribs and immediately thought of sticky BBQ sauce all over my face.  Being an able bodied adult, I made my dreams come true.  So, I dry rubbed them with Jose, let sit in the fridge for a while, then doused in BBQ sauce and broiled to caramelize.  Perfection! I always try to go homemade so I threw together a little sauce and everyone really liked it! 

Smoky Sweet Jose BBQ Sauce

1/3 cup finely chopped onion
1 small hot pepper of choice minced (discard seeds ribs for less heat)
3 cloves garlic minced
1 1/4 cup ketchup
1/2 cup water
1 Tbsp Worcestershire
2 Tbsp Coconut Aminos
3 Tbsp apple cider vinegar
1 1/2 tsp Jose Can You Sea? Salt
1/2 cup dark brown sugar
5 drops liquid smoke

Heat oil in medium heavy saucepan.  Saute onion and peppers about 3-5 minutes until softened. Add garlic saute until fragrant.  Add all other ingredients and whisk to combine. Bring to a simmer and reduce heat to maintain a low simmer.  Whisk occasionally.  Let simmer about 40 minutes until thick and reduced. Makes about 2 cups.
